Back by Popular Pancake Demand...

Ren often complains to me that no one comments on his posts. I then told him that my post about pancakes has received 17 comments. So did my public school post, but most of those were made by Erin and me! Anyways, back to my point. I told Ren that if he wanted to boost his blog numbers, post about food. I mean, who doesn't like food? You really can't go wrong.

I had some requests for the Buckland Homemade Buttermilk Pancake Recipe. It's really from my favorite Southern Living cookbook. Here it is:

Dry Ingredients
2 c. all-purpose flour
2 1/2 tsp. baking powder
1 tsp. baking soda
3/4 tsp. salt
2 Tbsp. sugar

Wet Ingredients
2 c. buttermilk
2 eggs (slightly beaten)
1/4 c. vegetable oil

I use my beloved cast iron skillet every time. I start heating it up on medium-low heat even before I start the recipe. Mix the dry ingredients together. Then mix the wet ingredients together. Then pour wet ingredients into dry ingredients. I use my stand-up mixer. Mix all together until just incorporated. If you over mix, you won't have very fluffy pancakes. Dump about 1/4 c to 1/3 c for each pancake into the pan. Flip, butter scandalously, serve hot with lots o' maple syrup.

Yay! Thanks for the recipe. I use a cast iron skillet for my pancakes too! It is the best :) I love cast iron, it makes me happy when I cook.
I almost commented on a Ren's blog the other day but I had to think to hard about it so I decided to come back to it later.

I love Ren's blog (just read it, and OF COURSE I commented, for the first time this week).
I am handing this recipe off to Ronnie for Sat. pancakes. Hmmn, will that make him angry? I don't know. . . it might make him more angry if I just start a pancake battle - his Aunt Jemima vs. S.L. / Ange's / my procured scratch recipe. I know - I need to wake up pre-Ronnie and kids (but!) and make this recipe and then he'll be happy no matter what!

When Wes and I first got married, he tried to get me to make tea like Chris Brown and iron his shirts the way he saw Ronnie do it. The result: I have never made iced tea or ironed his clothes for the last nine years!! So, tread carefully, Shannon...good luck! Maybe butter Ronnie up by telling him Wes loves his ironing techniques first. The only thing I had over Chris or Ronnie (both former room mates) was that Wes thought I was cuter.

I got all the ingredients and I plan to pull the cast iron skillet out of the back of the cupboard (I've never used it - although it is handed down so it is already seasoned). I'm excited! Thanks for sharing the recipe.

Angie, a word of warning on the skillet. It takes a while to heat up, but once it does the thing gets blazing hot! So I recommend starting out with a low to medium heat (usually somewhere between 3-4 on my stovetop). You may find that you need to adjust the heat SLOWLY. But be careful. I've burned many a pancake before learning how to do it just right!

My two cents on the skillet. I also heat mine to 4 (or med low) and start heating it before I even start assembling ingredients just like Ange. Even if your skillet is seasoned you may find that you need to add oil in between batches. :) Mine probably needs another seasoning session to fix that, but I just thought I'd warn you. It does not take much.

Thanks for the head's up, Elaine. I was wondering if I needed to put oil, butter, or non-stick spray into the skillet. I am looking forward to breakfast tomorrow. Yum yum.

That's so funny, Holly! I was wondering the same thing! Shockingly enough, we did NOT have pancakes this morning. Ren had to leave to work on the Frederick house early this morning, and I woke up late since I didn't sleep well last night. Me and the kids are actually on a "chocolate for breakfast" plan in various forms. We've had, in the past week, chocolate muffins (which are really just "bald cupcakes", according to Jim Gaffigan), chocolate covered strawberries, and this morning we had Cocoa Krispies. It's nothing but health food over here the Buckland house!

Wes and I actually did have pancakes today. It was a late breakfast for me. Wes and I stayed up til 3am last night. I feel like I've been hit by a mack truck ;) Anyway, pancakes and bacon were good, though I must admit I could go for some Cocoa Krispies right now!

We had the Southern Living pancakes this morning. They were tasty and filling. I need some more practice on the cast iron skillet, but all in all it was a success. Thanks for sharing the recipe and tips.
